Macadamia Nut-Crusted Kona Kampachi


6 Kona Kampachi fillets (6-7 oz)
1/2 pound roasted and salted macadamia nuts
1 & 1/2 cups flour (divided)
1 egg
3/4 cup whole milk
1/2 cup white wine


Preheat oven to 350 degrees. Combine nuts and 3/4 cup flour in food processor. Process until nuts are chopped medium to fine. In separate bowl, beating together egg and milk. Dust fillets with remaining flour, dip in egg mixture, then in nut mixture. Sautee fillets until golden, 1 to 2 minutes each side. Transfer to baking pan and bake in oven 10 to 15 minutes or until fish are done. Makes 6 servings
