Quick and Elegant Halibut

Ingredients

1 lb. halibut steaks, thawed.
Salt.
1 Tbsp. butter or margarine.
1 can (2-1/2 oz.) mushrooms, drained.
1/2 cup dairy sour cream.
1 Tbsp. dry sherry.
Paprika.

Instructions

Microwave Method:
Sprinkle halibut with salt; place in greased, shallow microwave-proof baking dish. Microwave at MEDIUM for 4 minutes. Place butter in 2-cup microwave-proof bowl; microwave at HIGH for 15 seconds. Toss mushrooms in butter; microwave at HIGH for 30 seconds. Stir in sour cream and sherry; spoon over halibut. Sprinkle with paprika. Microwave at MEDIUM for 3 to 4 minutes or until halibut flakes easily when tested with a fork.

Serves 3 to 4.

Conventional Method:
Sprinkle halibut with salt; place in greased, shallow baking dish. Bake at 425 Degrees for 5 minutes. Saute mushrooms in butter until lightly browned. Remove from heat; add sour cream and sherry. Spoon sauce over halibut. Sprinkle with paprika. Return to oven and bake at 375 Degrees for 10 more minutes or until halibut flakes easily when tested with a fork.

Serves 3 to 4.
