Halibut in Foil


4 portions skinless halibut fillets
4 cups thinly sliced vegetables (such as Peppers, onions, zucchinis, squash, mushrooms, leeks, broccoli, carrots, pre cooked potatoes etc..)
3 Tbsp. Olive Oil
1 Tbsp. Red Wine Vinegar
3 Tbsp. mixed dried herbs (such as Little Italy mix from the spice house)
1 Tbsp. Lemon Pepper
Pinch of garlic powder
Splash of wine
Mustard sauce
2 Small Foil Trays


Mix all ingredients except for Halibut and Mustard Sacue. Spread 1 cup of mixture in bottom of foil pan. Place 2 pc. of mustard coated fish on top of vegetable mix. Fill in sides with 1 cup of mix, repeat. Grill at 425 degrees in a closed grill for 15 to 20 minutes, untill fish flakes.
