Salmon Grilled on Cedar Plank

Ingredients

cedar planks
2 pounds Salmon
2 tablespoons vegetable oil
2 tablespoons soy sauce
1 teaspoon minced garlic
1/3 cup whiskey or chardonnay
1 tablespoon brown sugar
salt and pepper to taste

Instructions

Soak cedar planks in water for 1 hour at least (a ziplock type bag works well if you make sure there is no air in the bag bag).

Combine all ingredients except salmon and planks and blend to make marinade. Marinate fish 20 minutes.

Place soaked cedar plank on a hot grill over an even layer of ash covered charcoal or on a medium-high heated gas grill. When smoke appears place items on plank and roast till done. Fish take approx. 30 minutes for a 2 inch thick cut and 15-20 for 1 inch cut.
