Cajun Stuffed Trout


2 lb. Trout fillets with a pocket cut
½ lb. Cajun stuffing
½ lb. Crab or shrimp
Mustard sauce
Cajun seasoning


Mix shrimp or crab with stuffing and place in pockets of fish, folding flaps back over to cover. Top fillet with mustard sauce and sprinkle with Cajun seasoning.
Bake 425 15 minutes serves 4

1 pkg. stuffing mix
2 bell peppers
1 onion
Clam juice
Cajun seasoning (blackening spice)
Prepare mix with clam juice instead of water
Sauté vegetables with Cajun seasoning add to stuffing mix.
