Crunch Smelts


2 lb. smelts
2 eggs beaten
1 Tbsp. Garlic granulated or powder
1 Tbsp. Onion granulated or powder
1 tsp. pepper
1 tsp. salt
2 cup flour
1 cup cornmeal (fine ground white)


Preheat oil 350 degrees. Mix dry ingredients. Dry off smelts dip in egg, then dry mixture. Refrigerate 10 minutes. Fry until golden brown and crisp, approximately 3 minutes. Be careful not to cook too many at once.
Serve with Tartar Sauce, lemon, and cold beer.
