Grilled Scampi


2 Tbls. olive oil
1/4 lb. butter
10 cloves garlic mashed
1 tsp. pepper
1 tsp. thyme
2 lbs. Scampi
1 oz. Parmesan cheese (optional)


Sauté first five ingredients. butterfly scampi and brush with mixture. Preheat grill to 450 degrees if gas; or till coals are hot and lightly ashed over. Clean Hot grate and brush with oil. Lay Scampi on grill, flesh first and cook till shell turns orange. Cook shell side 1-2 more minutes. Toss cooked Scampi in butter mix and sprinkle meat with paprika and parmesan.
