Hollandaise Sauce

Ingredients

3 Egg yolks
1 Tbsp. water
1/2 lb. Butter (unsalted) melted
Lemon Juice
pinch of salt

Instructions

Using a double over light heat so not to boil add yolks and water, Whisk till texture of mayonnaise Remove from heat and slowly add butter while continuing to whisk. Season with salt and lemon
