Ingredients
4 portions skinless salmon fillets
4 cups thinly sliced vegetables (such as Peppers, onions, zucchinis, squash, mushrooms, leeks, broccoli, carrots, pre cooked potatoes etc..)
3 Tbsp. Olive Oil
1 Tbsp. Red Wine Vinegar
3 Tbsp. mixed dried herbs (such as Little Italy mix from the spice house)
1 Tbsp. Lemon Pepper
Pinch of garlic powder
Splash of wine
Parchment paper
Instructions
Mix all ingredients except for Salmon. Cut of 4 sheets of parchment into 18 inch lengths, and fold in half. Place fillet on paper just about touching the crease, top with 1 cup of mix, fold paper over. Make sure that all ingredients are in center of package. Starting folding parchment over like rays from the sun, (no wider than one inch at the outer edge after each fold move over a fingers with and fold again). It will take approx 15 to 20 folds to complete. Once finished fold final flap underneath so the package will hold in steam while baking. Place fillets in a baking dish with a splash of water or wine and bake at 425 degrees for 15 to 20 minutes.
