Warm Salmon Salad

Ingredients

2 oz. sesame oil
Zest from 1 orange
Juice of 2 oranges
1 Tbsp. Dijon Mustard
Pinch chopped tarragon
2 pounds Salmon fillet skinned and cubed (bite size)
2 oz oil
½ pound green beans
1 bag baby greens
2 Tablespoons black sesame seeds

Instructions

To make dressing Mix first 5 ingredients
Heat oil in skillet over medium heat; and brown salmon pieces for 3-5 minutes.
Blanch beans for 3-6 minutes
Assemble salads by arranging greens then beans followed by warm salmon top with dressing and sprinkle of sesame seeds
