Fingerling Potato Salad


2 Lb. Fingerling Potatoes
4 Tbsp. Cider Vinegar
Salt and pepper to taste
1 cup mixed fresh herbs, coarsely chopped
2 shallots chopped
1 garlic clove chopped
14 cup olive oil
12 tsp. grated lemon zest.


Cover potatoes in salted cold water and simmer till tender, 10-15 minutes. Drain and rinse till slightly cool to keep from over cooking. Halve potatoes and season with salt pepper and sprinkle of vinegar. Pulse vinagrette ingredinets in food processor and toss with potatoes.
