Fried Lake Perch


2 lb. Lake Perch fillets
2 eggs beaten
2 cups seasoned flour
Canola Oil
Tartar Sauce


Preheat Oil to 360 degrees. Dredge fish in flour, then dip in egg, and coat in flour again. refrigerate 10 minutes Using slotted spoon or spatula add gently to hot oil. do not try to cook to many at once or the oil temp will drop and fish will be oily. cook approx. 3 minutes meat will be opaque when done
