Mussels with Pesto


6 lbs. Mussels rinsed
2 Tbsp. butter or margarine
2 shallots or 1 med. onion diced
1 red bell pepper sliced thin
2 cloves garlic
1/4 cup wine
1/4 cup pesto

large pan with tight fitting lid


Sauté shallots, pepper, and garlic till tender, add wine and bring to simmer. Add Mussels to pan and coverfor 1 minute shake then drizzle with pesto cook till all are opened approx 3-4 minutes Serve with bread, rice, or pasta.
